Kippered Salmon -

Make
a 4/3 mix of brown sugar
to kosher salt, slit the
skin side, covered the
whole fillet and let it
sit overnight. Next wash
it off with cold water
and hung it up on bacon
hangers with a fan blowing
so the raw meat side would
skin over.
Smoke
it that night over apple
and hickory.
If
too salty, up the brown
sugar portion of the ratio
to take some of the edge
off.
Alfredo sauce for salmon:
1
stick butter
1 pint heavy cream
1 1/3 cups fresh grated
Parmesan cheese
Fresh ground black pepper
1 1/2 cups flaked, kippered
salmon
1 cup peas.
Melt
butter, add heavy cream,
bring to boil, back off
heat and simmer 5 minutes.
Add Parmesan cheese, kippered
salmon, peas, and pepper.
Shut off heat.
Serve over spinach Fettucine
with beverage of choice.
